Heat your pan over medium high heat. Add little oil to the pan, and add the eggs, scrambling them until they’re just cooked. Use your spatula to break up the large pieces into smaller chunks, and put them back into the same bowl you mixed them in. Set aside.

Stir fry the shrimp until opaque, transfer them back to their bowl, and set aside.

With the pan over medium high heat, add little oil, and add in the onions until translucent.

Then add in your veggies mix them together then

add salt, black pepper, garlic, curry and thyme, scotch bonnet pepper( it’s optional )and stir well. Now add the shrimps and eggs , and stir fry for 30 seconds.

Add the rice to the veggies and egg mixture. Pour the soy sauce on top and stir until it is heated throughout. Garnish with green onions.

I added more soy sauce

You’re done. Serve with anything of your choice.

Enjoy!

  • Get everything prepared. Once you start cooking, it comes together fast. So have everything lined up and ready to throw into the pan!
  • Keep it moving! Stir fry, stir fry, stir fry! Don’t let your ingredients sit still for a second!
  • The shrimps is optional. You can make use of chicken strips or diced beef.
